Why does ice cream develop large crystals of ice?
Why does ice cream left for long periods of time in a freezer, with occasional removal for sampling, develop large crystals of ice?
Larger crystals are more stable than smaller ones. If you have a mixture containing small crystals of some compound and leave it for a long time (especially with a solvent surrounding the crystals), larger-than-average crystals will grow larger and smaller-than-average crystals will shrink and eventually disappear. After a long time, you get mostly large crystals in the mixture.
This process is known as Ostwald ripening. While there is an entropic disadvantage to forming a few large crystals over many smaller ones, this is usually outweighed by the energy advantage of lining up molecules/ions in the crystals (a molecule is more stable in the middle of a crystal than at an edge, generally). This effect is pretty general and is not even limited to crystals: oil droplets dispersed in water will undergo the same process.
Ice cream is designed to have only small ice crystals, for a smoother texture. Whipping the ice cream during the freezing process helps keep the ice crystals small. In ice cream, the process that allows this ripening to occur is sublimation of the ice. Ice has some vapor pressure; ice crystals will exist in equilibrium with some water vapor. These crystals are constantly losing some water to sublimation and gaining water from condensation, allowing the crystals to reach a more favorable size distribution over time.
