How do I transfer a cake once it has been iced?
After I bake my torte, I place on a wire rack to cool. The icing recipe is a ganach, therefore I need to pour melted chocolate over the cake while it is on the wire rack. How do I remove the iced cake from the wire rack to a serving plate?
Very simple. Do you have a sheet pan that doesn't have a rim--a cookie sheet pan, they have a turned up edge on one side? Slip the edge under your torte to the other side and then bring the sheet over to your plate and gently slide the torte off on to the plate. We use a tool called a cake lifter but the cookie sheet will do a great job for you.
